Was canning tomatoes yesterday for the first time. Not to bad but drawn out. Gonna can the different tomatoes tomorrow. Who else cans their garden stuff.

When i was a kid, i helped my grandmother can tomatoes. Great big really ripe dark pink Russian Oxhearts grown from seeds saved each year for many years from only the biggest. Also did some pointy tomatoes that looked like banana peppers. Made some really good spaghetti sauce out of them.

Canned some Roma tomatoes. Were done till next yr.

my wife has canned 54 quart of sauce,16 pints of salsa, 16 quart stewed, and 16 pints of pizza sauce. i think we are done with the maters.

Thought we were done but I was wrong. Picked some peppers and need a recipe for the brine so they stay crispy some were like eating mush too soft. Any brine recipes out here would be appreciated.

I tried canning some hungarian and jalapeno's last year and got mostly mush.
I'm on a hunt right now to find alternate methods and will post if I get something useful.

I know my favorites by far are the "giant pink oxhearts". Very sweet.
