How do you cook them? I cut up into pcs. legs, etc, then put in a pot of water with some onion, then cook until tender, then pan fry in butter, until nice and brown, meat just falls off the bone.

I saw a show on TV once and this Southern Woman fried them pieces in an iron skillet w/oil and a coating of flour. Then she made a gravy out of the oil w/ flour and milk.The men sucked it up like they haven't eaten in weeks. Didn't turn me on. I make stew out of them.

Boil them until almost done, then brush on BBQ sauce and finish cooking in the oven.

Try this & you probably wont cook them any other way. Wrap them in foil with butter & salt & pepper & any other seasoning you want then put them in the oven on 325 degrees for about 45 minutes & they come out so juicy & tender. Squirrel meat is 1 of the best wild game meats there is. At least that is my opinion. I know a lot of people say they are just big rats. But they sure are good.

boil till tender then into a dutch oven with a little bbq sause and burbon till done. this is usually done over the fire.
