I did a lot of fishing in past years, and a recipe I always liked to use was... a cup of beer a cup of pan cake batter one egg, makes a tasty coating.
I also like to just take fillets, and cover with flour, egg wash, and seasoned panko bread crumbs, gives the fish or anything a great crunch and flavor, great on chicken also.

try using potato chips or one of my new favorites snyders of hanover sea salt and cracked pepper pretzels as a breading. just crush them up and use just like bread crumbs. its adds a different flavor and is verry good imo.
