Smoked carp is super. Also great canned in tomato sauce. You can even grind it with onion, bread crumbs and a bit of egg, form into patties and fry. To ge rid of any mud taste, soak in buttermilk overnight (not kidding).

Cool fellas!! Yes, I was thinking either smoked or patties also. Are there any weird bones to deal with? Cleaning suggestions? Thanks-Jack.
