Nice!!!! I've been getting a lot of peppers as well, just stuffed and froze 125 hungarian hots yesterday. Have a batch of green peppers ready to pick now & some maters ripening, but not ready to pick yet. What the heck ya going to do with all those cukes? ? I've been getting quite a few, but not that much - only put in 3 plants this year.

I have made stuffed bell peppers but never did stuffed hots. My cukes that’s 4 plants and that’s the 4th big picking my family and friends are well stocked in cukes and we are going to pickle some

I have made stuffed bell peppers but never did stuffed hots. My cukes that’s 4 plants and that’s the 4th big picking my family and friends are well stocked in cukes and we are going to pickle some I stuff them with the same mix I make for the bells (burger, rice, crushed garlic, onion, crushed tomatoes and seasoning), bake them just like you do bells alone or with some bells, that's very good BTW, mixed with stuffed bells. I also stuff them with sausage, usually deer sausage and bake plain, no sauce, great as an appetizer. You can clean and freeze them unstuffed and whole and thaw later for stuffing, they hold up just fine unlike trying that with bells. hmmmm, never though of making pickle spears with my cukes.....may do that!! I did pickle soem green beans, they're good that way.
