What about a venison roast in a crock pot with BBQ sauce, or cook it in beer, then add the bbq sauce, Pull the meat apart like pulled pork. Haven't tried it yet but it sounds like it'll work. Anyone ever tried that? I heard marinating venison in italian dressing gets rid of the game-y taste.

You can do just about everything with deer that you can do with beef. Personally im not too keen on barbecued beef so never tried deer. Do like barbecued pork. Im kinda a picky eater though. lol.
IVe used italian dressing regularly as marinades overnight on different meats to be grilled, sometimes alone other times mixed with a few other things. Works great on chicken breasts, porkchops etc. Never tried it on venison, but dont think it would hurt it...
As for beer, dont have alot of experience with roasts cooked in it, but but have done some mighty fine whole beer can chickens basted with beer & other stuff on the grill. Also back in the day, myself and some buddies regularly after successful hunts would butcher a deer cut out the straps slice them thin and soak it in beer while drinking alot more of the same. ;D In the mean time one of us would take a shallow oiled pan put it on the grill, and fry up some green peppers onions mushrooms and garlic cloves till about done, Then put the meat on with it to brown quickly.and hit em with salt, pepper, garlic salt etc.
I think i remember it being very good. But some details of those days are kinda fuzzy. lol.
