Pheasant noodle soup

• 1/2 cup celery, chopped
• 1/2 cup carrots, chopped
• 1/2 cup onions, chopped
• 42 ounces chicken broth
• 1/2 teaspoon poultry seasoning
• 1/4 teaspoon black pepper
• 2 tablespoons butter
Directions
Cut the pheasant breast into several pieces and place it in a sauce pan with enough chicken broth to cover it. Boil the pheasant for about one hour, or until tender. Remove the pheasant from the broth and cool it. Shred the pheasant pieces with your fingers, being sure to remove any shot pellets. In a large sauce pan, melt the butter and sauté the celery, carrots and onion for several minutes. Add the chicken broth, egg noodles, seasoning, pepper and pheasant pieces and boil until the noodles are tender.
