Ive caught a few here or there in minnow traps baited with dogfood. Usually catch a few in any rocky streams with trap left overnight. Not alot, but usually a couple to a few in the bottom. Ive always caught alot more by seining creeks where there are lots of them.
Ive never found a fish that liked them better than something else though. Especially the main species i fish for these days, so dont mess with them. Only Exception is soft ones. Everything loves them. Absolute candy to just about anything, even other crayfish. Ive even had 6 and 8" suckers & chubs in a large minnow/bait tank eat softshells when very soft that were almost half as long as they were, even though they couldnt even come close to fitting in their mouth. Suck them up like jelly.
Only way to get softies is to go around lifting up flat rocks in creeks and look for the off colored crayfish. Cant get them in any "numbers" so havent bothered with them for years. Caught them as a kid when i could find some.

Me and the son seine em in Whitely creek but this year the creek is messed up. Used to be crystal clear where we went but not the bottom is covered with a brownish slim and the water is real murky. I set out a trap and some SOB took it, Rope and stake where there but the trap was gone---

Id never had a trap stolen, but I know its pretty common. When i would put traps out, id usually try and put it in a hole of a smaller stream, and up against some brush where it wasnt as noticable. I also would take a good sized branch or smaller dead tree and tie my rope to it on the end, and stick that end out into the water so the rope would be underwater and set the but end of the branch up into the weeds on the bank. Always use brown rope, i used just bailer twine, blended in pretty well.
