I plan on buying a pressure cooker this year and doing it myself. There are those who just water bath it - process the jars in boiling water for a few hours. It's very good canned, and easy access for stews and such. The recipe I plan on using is just adding a slice of onion, some garlic cloves, salt and pepper. I may try some with montreal too.

My cousin from WV cans alot of deer meat and quite frankly, it's pretty good. I've watched him do it and it's pretty easy. I need to call him and have him splain it to me so I can take notes.
