Chatting up boilo in the home remedy forum and I decided to post it here if anyone is interested in making a batch. It's really good on those cold nights, around the holidays and after a long day of hunting.
Tools of the trade:
Shot glass for tasting as we go
Cheesecloth
Cooking String
2 Lg Pots
1 Strainer (itsy bitsy holes)
Hand Juicer do-dads. Pampered Chef has a good one.
1 Fifth of shine, grain or Four Queens (keep away from stove!)
4 Oranges
4 Lemons
1 Box (snack size) Raisins
1 Bottle of honey (8 oz)
About 5-6 bottles of Spiced Ginger Ale (20 oz bottles) (A-Treat makes it)
1 Cup OJ no pulp
3 Cinnamon Sticks
1 tsp Whole Cloves
1 tsp Caraway Seed
1 tsp Anise Seed
1 tsp Nutmeg
1/2 tsp Pumpkin Pie Spice McCormick makes it.
Extra OJ for taste adjustment (no pulp)
Slice the oranges and lemons in half and juice the crap out of them. Pour juice into pot. Toss in the rinds. Picking seeds isn't important, the strainer will get 'em. (Some people peel the fruit, I don't) Add 4 bottles of the ginger ale, to start. Simmer over very low heat. You don't want a boil in making boilo, even though the name would lead you to believe you need to "boil" something. Once concoction is hot, add the honey. Continue simmering.
Open up the cheesecloth so that it is double ply. In the center of the cloth, pile the cinnamon sticks, raisins, cloves, caraway seeds, anise seeds, nutmeg and the pumpkin spice. Pull the ends up to meet in the center and tie it closed with the cooking string. A teabag like thing. (I call it a boilo bag) Toss it into the pot. Simmer for about 45 minutes. During this time, you use your judgement on adding more ginger ale. The consistency should NOT be syrupy. Add soda to thin.
After the 45 min is up, get your trusty shot glass. Put some into the shot glass. Look at the color. It should be a golden-yellow-orange (hard to describe). Taste it. Add the OJ and Ginger Ale as needed to reach the desired taste and color. Once you reach the desired taste and color. It should be a smooth blend...nothing over-powering one way or the other. REMOVE FROM STOVE. (very important)
Remove "boilo bag". Remove rinds. Pour liquid from pot through strainer into another pot. Put the pot with brew in it on a counter AWAY FROM THE STOVE (on a hot pad, so not to damage counter top). Add the "Good Stuff". I'd add it 1/3 at a time, mix thoroughly and taste. Keep adding and tasting until you get it where you want it. Or you pass out from the whole ordeal. Again, the final product should be smooth...but have a little kick. Boilo making is fun!
