Anyone putting anything up this year??? Aside from the veggies I froze -beans, broccoli, peas, chopped green peppers for cooking, spinach and brussel sprouts- I stuffed & froze about 125 hungarian hot peppers with the regular stuffed pepper mix & made & froze 3 large pots of stuffed peppers soup. Last night me & a friend put up about 12 quarts of quartered tomatoes, 40 quarts of homeade sauce (onions & herbs from garden as well), 12 pints of salsa & did about 120 jalapeno poppers plus cored & froze another 120 or so hungarian hots to be stuffed later with venison sausage. Was at it until 1am!!(didn't get home till about 1:30) Got up at 6 & helped a friend with some dog training....about ready for a nap! ;D

I did 12 quarts of homemade spag. sauce from tomatoes in my garden. In my house that will last like.. 2 weeks.

We put up 8 qts of a mustard we made good mustard got a lil bite too it. And some spaghetti sauce. This was our first yr experimenting with the canning/freezing process.

I don't have a garden but I did can--12 quarts of corn--12 quarts of green beans---6 quarts of tomato juice-- 8 quarts of banana peppers stuffed with keilbsa---6 quarts hot peppers--and 12 quarts bell peppers in tomato juice

Nah, I'll let you know, doesn't sound too bad. Simmer the sauce all day, boil it in the jars for 45 minutes and let it cool and it seals. Bingo I'm ready for the impending depression!!

I'm expanding my garden this year, already getting pots out to start the early crops next month (lettuces, peas, etc). Not planting yet mind you, just gettign everything ready to start next month for planting in April. Plan on freezing more stuff in this year I ran out of almost everything already!!
