To save on cutting when I get a deer I make soup. Of course you can do this at any time and use your own judgment for the meat cuts and amounts. Here is what I do and put in the pot. First I cut the larger muscles from a front leg and trim them. I don't know how many lbs it is, I just throw in in the pot. Then I peel a half dozen potatoes about the size of your computer mouse and throw them in. Next I peel 3 or 4 onions and throw them in whole. Followed by 5 or 6 celery stalks cleaned and cut into 3-4" pieces. Then 5 or 6 good sized carrots cleaned and cut into 3-4" pieces. Top it off with water to cover the ingredients by about 2 inches. Bring to a simmer and cook until the meat starts to fall apart You can very the amounts, add salt pepper garlic to it if you want. I sometimes eat it over noodles and sometimes as is. Its sort of like chili, you can have good or marginal but seldom ever have it turn out bad. The plus is that its great on a coal stove in camp, if your lucky enough to have one, to keep warm all day. I just made a large pot of stew, threw in about 3 lbs of venison chunks, sauteed' them in oil with garlic and onion. Added some beef boullion, then water - then (from my garden) limas, green beans, corn, peas(not from garden) carrots and taters. A shot of worchestershire, some seasonings,mmmmmmmmm
